Michael HillLets hear it from Michael Hill![]() Growing up, Michael Hill dreamed of becoming a concert violinist but went on instead to become one of the country’s most successful entrepreneurs. His signature jewellery chain, which now spans four countries, and personal-style TV advertising have made him a household name and living legend in the world of retailing. Still an enthusiastic violinist, he established the biannual Michael Hill International Violin Competition in 2001 to foster young talent. He’s also the proud owner of the championship Hills golf course in Arrowtown, which hosts the country’s premier golf tournament, the Michael Hill New Zealand Open. Crack the USA jewellery market Michael's Recipe Wild rabbit in red wine 1 rabbit, wild caught 2 large onions, chopped 1 bunch of parsley Dry or fresh tarragon Rice flour Dry mustard Red wine Olive oil Joint the rabbit and dust pieces in flour mixed with dry mustard and tarragon. Sear in hot pan using a small amount of olive oil. Fry onions in pan. Remove onions and put in casserole with rabbit joints. Sprinkle a small amount of flour mixture and cook together to make a sauce. Add sauce to rabbit and throw in chopped parsley. Cover and put in a slow oven 160°C for two hours or until rabbit is tender. Check occasionally to make sure it has not dried out. If it has, add more red wine. |
